Thousand Year Old Olive Oil

Over 2400 years ago, Democritus said the following after tasting a hundred-year old olive oil : ‘Oil on the outside, honey within’. The thousand-year old olive trees of the ‘Farga’ variety have been catalogued as such by the Regional Government of Valencia (Spain) as well as by the 22 towns that comprise the ‘Taula del Cenia’ area in Eastern Spain’, following a scale that measures the tree trunk’s perimeter: 4 metre = 1000 years 6 metre = 2000 years 8 metre = 3000 years

In 2009, there were 4080 certified thousand year old olive trees in the area, all aged between 1000 and 3000, and found along the ancient Roman causeway ‘Via Augusta’, that linked Rome with Southern Spain. These olive trees are very resistant to droughts, high temperatures and frosts. The ‘Farga’ olives are exceptional and well balanced, with a clean and intense aroma that reminds of the natural processes that go from green to ripening.
Olives are hand-picked, at the most suitable moment of ripeness, in order to obtain an oil of exceptional quality. The harvest is supervised by an agricutural engineer, who certifies the oils that can be marketed. The oil has a limited yearly production, as is stated in each numbered bottle, together with its vintage certificate.
